Moist, moreish & marvellously tangy Greek orange cake

This is a fabulous greek orange cake made with Olive Branch Olive Oil. The whole cake is based on olive oil, with no butter used at all. This dish showcases the delicate flavour of Olive Branch Olive Oil.

Ingredients:
- CAKE
- 4 oranges, zest and juice (315ml approx)
- 250ml Olive Oil
- 300g Sugar (rapadura or brown)
- 2 eggs beaten
- 250g Spelt flour (or regular wheat)
- 50g ground almonds
- 100g brown rice flour
- 15g baking powder
- ICING
- vanilla extract (optional) 6 tbsp icing sugar
- 3 tbsp orange juice

Cooking Instructions:
- Heat oven to 160 degrees C
- Grease and line a 26cm (10") loose bottom or spring form tin
- Whisk sugar with orange juice and zest
- Add lightly beaten eggs
- Then add olive oil, ground almonds and sieve in the flour mixing with the baking powder
- Add one or two teaspoon of vanilla extract if desired
- Pinch of salt
- Whisk till if feels good!!
- Bake for 30-40 minutes
- Sift sugar, gradually add juice for thin glaze
- Pour over the hot cake
