Celeriac, courgette, cherry tomato, pine nut slaw with our Aubergine & Basil Paste.

This is a hearty winter slaw, full of flavour, dairy and gluten free!

Ingredients:

  • 100g grated celeriac
  • 100g grated courgette
  • 2 tbsp Olive Branch Aubergine & Basil Paste
  • Pinch of sea salt and ground black pepper
  • 30g pine nuts
  • 50g cherry tomatoes

Method:

  1. Lightly toast the pine nuts in a dry pan over a medium heat until starting to brown
  2. Slice the cherry tomatoes and mix with the celeriac, courgette, tapenade and pine nuts
  3. Season to taste
