Such a quick and easy dish, but incredibly delicious!
...and our cold-pressed Lemon Olive Oil takes it to a WHOLE new lemony level.
We added a little milk to loosen up and allow the feta to be blended into a smooth paste. The taste and texture is almost like a (salted) savoury lemon cheesecake!
Break up the feta.
Add a good glug of Lemon Olive Oil.
Begin blending (we used a hand blender), adding a dash of milk gradually as you go as you blend into a smooth mixture.
Serve with a little more oil poured on top, with toast, bread, pitta, oatcakes, veg, corn chips or whatever you prefer.
