Celeriac, courgette, cherry tomato, pine nut slaw with our Aubergine & Basil Paste.
This is a hearty winter slaw, full of flavour, dairy and gluten free!
Ingredients:
- 100g grated celeriac
- 100g grated courgette
- 2 tbsp Olive Branch Aubergine & Basil Paste
- Pinch of sea salt and ground black pepper
- 30g pine nuts
- 50g cherry tomatoes
Method:
- Lightly toast the pine nuts in a dry pan over a medium heat until starting to brown
- Slice the cherry tomatoes and mix with the celeriac, courgette, tapenade and pine nuts
- Season to taste
