Poached Chicken with Lentils & Dill

This dish demands a good quality Oil & Vinegar, as once mixed with the other ingredients you'll have a tasty dressing, perfect for mopping up with fresh bread.

Ingredients
8 chicken thighs
2 cups of lentils
Fresh dill
Salt & Pepper
Red Wine Vinegar
Olive Branch Extra Virgin Olive Oil
Cooking instructions
1Place the chicken in a pan, season with salt and add some water.
2Place on a stove and bring to the boil.
3Boil and simmer until the chicken is cooked.
4In another pan, add the lentils and boil until cooked.
5Allow the chicken and lentils to cool.
6Transfer the lentils to a serving dish.
7Cut the chicken from the bone and place over the lentils.
8Scatter lots of freshly cut dill, salt and pepper.
9Drizzle plenty of Red Wine Vinegar & Olive Branch Extra Virgin Olive Oil and stir the mixture completely through.
