A cooling but satisfying chilled soup, perfect for a sunny summer day.

We used pre-cooked sweet potato from the fridge, so this really was a VERY instant speedy soup! The Roasted Pepper Paste adds a vibrant hit of colour and a gentle heat, while the mint and our Lemon Olive Oil add a classic coolness for a beautiful balance.

 Sweet potato⁠⁠
 Tomato⁠⁠
 Cucumber⁠⁠
 Mint⁠⁠
 Roasted Pepper Paste
 Lemon Olive Oil
 A squeeze of lemon, salt & pepper⁠⁠
 Spring onion, basil or coriander to garnish

Simply blend together the pre-cooked sweet potato, cold cucumber and tomato with a dash of Lemon Olive Oil.⁠⁠

Serve into bowls then swirl in a good dessertspoon of Roasted Pepper Paste, mint, spring onion and a squeeze of Lemon.⁠⁠

Season with sea salt and a good black pepper then enjoy with a slice of fresh bread.
