Garlic butter beans, mashed on toast with chard & basil - a healthy, nutritious and tasty brunch or lunch.
Great for a lazy weekend brunch or quick lunch: Butter beans with Infused GARLIC OLIVE OIL with wilted red chard & purple basil. Served on an amazing organic sourdough from a local indie bakery.
Extra Vegan friendly as our olive oil is harvested by hand (search "birds olive harvest" to find out more).
Garlic Olive Oil
Cooked butter beans
Garlic Olive Oil
Bread of choice
Chard or similar
Purple (or green) basil.
1Heat the butter beans in a pan with water, then drain out most of the liquid.
2Add the chopped rinsed chard to the pan and let the remaining water steam the chard.
3once steamed, if too much water still remaining drain away, then roughly mash, adding a little salt and pepper and a good glug of Garlic Olive Oil.
4Spread on the toast and top with fresh basil.
